I'm not sure I would attempt this. In fact, I know I wouldn't. I'm trying to get rid of the pressure cooker that my husband bought me! But Jenny likes to homestead - and make things from scratch, and so canning is right up her alley.
I have many fond memories of my Grandma Palank canning many, many, quarts of tomatoes that my Grandpa would harvest from their backyard garden. And I always enjoyed being sent to the basement of their little South Dakota home to fetch a jar of pickles, or jelly, or beans from the downstairs larder, so we could enjoy a homemade meal anytime of the year.
It makes me happy to see my Jenny following in my Grandma's footsteps. Canning skipped a generation in the Bickett family, but it's finally home again.
