It's funny. When I think about my parents having guests over, or Christmas Eve dinner, or when the grandparents were in town -- this is the ONLY thing I remember my mom making! I know she must have had other "company" dishes - but this one is at the top in my memory.
Also funny, I have to copy the recipe to the blog from an old recipe card that my friend Gail wrote for me when she gave me a recipe book for my wedding shower - 40 years ago!!!
So many happy memories!
Mom's Company Chicken
Ingredients
6 - 8 chicken breasts (I used cutlets - whole breasts would be too much chicken)
For the Coating:
1 cup flour
Salt
Pepper
Paprika
For the Sauce:
1 can of Cream of Chicken Soup
1 cup white wine
1/4 cup diced bell pepper - any color - I like the festive reds and oranges!
Pinch of Thyme
Pinch of Powdered Ginger
Can of sliced Water Chestnuts, drained
Place coating ingredients in sack. Use as much salt, pepper and paprika as you like. Place chicken in sack, shaking to coat one piece at a time.
Melt 3 tblsp of butter ( I used a mix of ghee and butter) in frying pan, and place chicken in pan.
Fry until golden brown.
Place the following ingredients in a sauce pan, and heat until boiling:
1 can of cream of chicken soup
1 cup white wine
1/4 cup bell pepper
Pinch of Thyme
Pinch of Powdered Ginger
Can of sliced Water Chestnuts, drained
Pour sauce over chicken in casserole dish ( hello Corning Ware!) Cover with foil. Bake at 350 degrees for 45 minutes.
