Cooking for the 40th!


Here's the recipe I used:


BUT I always use recipes as sort of guidelines, instead of hard and fast requirements. And the more that I have been cooking in quarantine, I can feel myself moving even farther away from recipes, especially ones that don't require baking. But baking -- that's kinda like chemistry. And I was never that good at chemistry!


We did have eggplant ragout for our 40th anniversary dinner in the mountains. It was just Robert and me, pasta and turkey meatballs, and egg plant ragout, with candles lit on the table. Robert gave me a beautiful mother of pearl inlaid lacquer box, and I gave him the plans and lumber to build a picnic table for our mountain backyard. You have to be inventive after 40 years!
