It's so satisfying to eat from the garden! This was my first real beet harvest - but I know I could do better. I needed to thin them properly. Still, enough for a lovely Borscht.
My grandparents were from Hungary and Russia - so Borscht is in my genes - and I was delighted to relive some of those childhood memories around my grandparents dinner table in South Dakota.
Thanks to Julia and Dan who are always up for a cooking challenge, and intimidated by absolutely nothing! Love them.
